Zucchini Cakes

These little guys sometimes are called zucchini fritters but here they’re more like cakes because fritters have smaller ratio of egg and flour to zucchini. They’re very quick to make and very tasty. You can make that way all kind of veggies, just mix with flour and eggs and fry small, round cakes. I also love them with potatoes, like a mini frittata.

Ingredients (about 10 cakes):

1 large zucchini
1 Tbsp chopped red chili pepper
1 tsp dry thyme
1/2 cup flour
2 eggs
Salt

Grate zucchini into a bowl, salt slightly and set aside for a few minutes so we can get rid of the excess water from zucchini.

Sieve the flour to a bowl, add zucchini, chili, thyme, salt, eggs and mix everything until well combined.

Fry small, flat portions on a medium heat about minute per side or until golden brown. Transfer to a plate covered with  kitchen towel so it will absorb excess oil.
