Tofu Caesar Salad

Who said that caesar salad tastes good only with chicken? My version is with blackened tofu and together with lettuce makes a perfectly healthy and satisfying lunch. Tofu is an amazing substitute for chicken breast. Similarly to chicken breast,  tofu acquires taste of whatever seasonings  you use and can be used instead of chicken in most of the recipes.

Ingredients (1 serving):

4 romaine lettuce leaves
Handful of croutons
2 one inch slices of extra firm tofu
Complete seasoning

For the dressing:

1/2 cup olive oil
1/4 cup water
1 garlic clove
1/3 cup parmesan
Juice of 1/2 lemon
1 Tbsp Dijon mustard
1 tsp worcestershire sauce
1 Tbsp white wine vinegar
1 tsp sugar

Prepare dressing by simply mixing all the ingredients in a blender. The ingredients should be for more than one salad but you can store the dressing in a fridge for later use.

For the salad cut the lettuce into pieces and mix in a bowl with croutons and dressing.

Season tofu with complete seasoning and fry on both sides until blackened. Cut diagonally and serve on a top of the salad.

    What is the “complete seasoning” listed in the ingredient list? I’m not familiar with this. Btw, I love your recipes! Can’t wait to try them!

    Yes it is ‘complete seasoning’, it basically is a mix of salt, pepper, garlic and other spices that enhance flavor. You can use any seasoning mix you like, I like to use them because they’re so convenient.
