Back to school, healthy Hummus wrap for lunch.

It’s back to school time, some kids already started school, some will within the next few days. This week I want to present some healthy vegetarian lunch ideas for kids so they won’t have to be eating junk at school. A lot of parents don’t prepare lunches for their children believing that school provides them with proper nutrition. Unfortunately healthy and school often are as antagonistic as rain and desert.  Whoever watched Jamie Oliver’s show “Jamie’s Food Revolution” on ABC knows what I’m talking about. I’m assuming you can still watch the show for free on ABC website. Jamie tried to revolutionize American school food system, he already did the same thing in England and now he’s been trying to make some changes in US. It’s hard to say if the results were spectacular, he was only active in one town in few schools but I believe that with people’s attention to the problem much more can be done. Anyway, knowing how badly they feed our children at school, I would rather be cautious and make school lunches by myself. At least I know what I put inside and I know that my kids (or rather future kids) eat healthy and nutritious meals. By the way, can you believe that schools classify french fries as a vegetable. That’s one of the most ridiculous things I’ve ever heard . So to all the parents that don’t want their young ones to eat junk, it’s a new school year so take charge of your children nutrition and weight and start preparing them healthy lunches for school. It takes just a few minutes and is so much better for them than nuggets and fries few times a week.

Ingredients (makes 1 wrap + more hummus left for you):

Hummus:

1 x 15oz can garbanzo beans
1/4 cup olive oil
1 1/2 Tbsp Tahini paste
1 garlic clove
1 Tbsp lemon juice
1/2 tsp salt
Few Tbsp water

Wrap:

1 x 10 inch tortilla
2 Tbsp hummus
1/2 cup shredded lettuce
1/3 cup shredded carrots
1/3 cup julienned cucumber
1/4 cup black olives

Start with hummus. Throw all the ingredients into a food processor and process until smooth. The mixture might be a bit thick and hard to process so you can add few tablespoons of water or a bit more olive oil.

Tip: if I don’t have tahini at home I simply toast 1 or 2 Tbsp sesame seeds and throw to a food processor instead of tahini.

Spread 2 Tbsp hummus in the center of a tortilla leaving about an inch on a top and bottom and few inches on a sides.

Follow with the lettuce, carrots, cucumbers and olives.

Fold top and bottom edges of the tortilla, turn around 90 degrees and wrap the remaining tortilla around the filling. Wrap the tortilla in aluminum foil to hold its shape. Cut into half.

    This is a fantastic idea for lunch. I don’t have kids, but make my own lunch to take to work every day and am always looking for new healthy recipes. Yours looks great and I love hummus, so will definitely give it a try.

    I teach high school and the school lunches at my school are awful. It makes me upset sometimes to watch the kids eat them. Thanks for the week of healthy lunches…I’ll definitely be back :) I’m always looking for good, new lunch ideas.

    What a beautiful wrap! Why is hummus so amazing? And so simple to make. There was this restaurant in Berkeley while I was in college that had the most amazing hummus sandwiches. I am practically drooling just thinking about them now. Your addition of the olives sounds especially tasty. Yum! What an easy, nutritious, healthy lunch for back to school. Thanks for sharing!
