Cilantro Tofu Bean Burgers

Being vegetarian sometimes is not easy. Especially when eating out or during barbecue season. Everyone’s grilling ribs or steaks and again the only option for you is store bough veggie burger. I personally don’t go crazy for them, prefer to make veg burgers myself. Great thing about homemade veggie or bean burgers is that you can prepare them ahead and take with you to a barbecue party to put on a grill. And they taste so much better than the store brands.

Ingredients (make 5 patties):

3 cups cooked pinto beans
6 oz firm tofu
1 egg (for vegan option substitute egg for egg replace or use silken tofu instead of firm tofu and egg)
3 Tbsp bread crumbs
5 Tbsp chopped cilantro
1 onion finely chopped
1 small poblano pepper chopped
1 minced garlic clove
1 tsp salt
1/2 tsp pepper
1 tsp ground cumin
1 tsp smoked paprika

For the green mayo:

Small bunch of cilantro
1 garlic clove
2 green onions
3/4 cup mayo or vegenaise
1 tsp lime juice

Start with the sauce. Put all the ingredients to food processor and process until smooth.

For the burgers put beans, egg and tofu to a food processor and process until smooth. If you processor is small and not very powerful like mine, you might want to do it in portions.

Meanwhile saute the onion, poblano pepper and garlic until soft. Season with salt.

In a bowl combine burger mix with cilantro, sauteed onions and peppers, Salt, pepper, cumin, smoked paprika and breadcrumbs. Mix well. If necessary add more bread crumbs.

Form uniform patties and fry on a greased grilling pan on both sides. Be very gentle when turning over because they might break easily.

Serve on a bun with some green mayo.

    Magda , these look great & I love the ingredients. You could even call these “Mexican” Tofu burgers :) I’ve never tried making me own and you are really inspiring me. I’ll have to let you know when I make them.
