What is Macrobiotics?

Recently I became very interested in macrobiotic diet. It’s an old Japanese diet but only recently it gained a lot of popularity, mainly  because many celebrities follow it. Madonna even has a macrobiotic chef in her kitchen to prepare macrobiotic meals for her whole family. Even though most of us heard about macrobiotics, not many of us really know what  is this. So what exactly is a macrobiotic diet?

Black Bean Tacos with Tomato Salsa

Mexican cuisine have so many fantastic recipes. It’s really hard to choose but the most famous are obviously tacos. Who doesn’t like tacos? Personally never heard of anyone that is not into tacos. And there are so many different ways to make them, the possibilities are endless. I like mine with some fresh tomato salsa. I’m a tomato  addict so fresh tomato salsa is a must.

Soybean Patties with Mushroom Gravy.

When I first became vegetarian while still living in my home country Poland, I’ve never heard of tofu. Any of my local groceries didn’t even carry it. Fortunately soybeans were easily accessible so it was my main source of protein. And it’s a great substitution for animal protein. It contains 40% protein, a lot of fiber, Omega-3 fatty acids, Isoflavones. Moreover it is the only plant protein that contains full set of essential amino acids like animal protein.

Eggplant Parmagiana

My version of eggplant parmigiana is slightly lighter than the original one. In original recipe eggplant is usually fried on a skillet before being baked with marinara sauce and cheese. I also omitted breadcrumbs, I do not think they’re necessary and they absorb a lot of fat so it’s healthier to prepare unbreaded eggplant. By the way, I’m not giving the amounts of ingredients because they pretty much differ from person to person. Some people like more cheese, some more tomato sauce.
