Black Bean Tacos with Tomato Salsa

Mexican cuisine have so many fantastic recipes. It’s really hard to choose but the most famous are obviously tacos. Who doesn’t like tacos? Personally never heard of anyone that is not into tacos. And there are so many different ways to make them, the possibilities are endless. I like mine with some fresh tomato salsa. I’m a tomato  addict so fresh tomato salsa is a must.

Ingredients (6 tacos):

1 can black beans
1/2 cup corn kernels
1 cup shredded Mexican cheese
Small corn tortillas
1 tsp ground cumin
Salt, pepper

For the tomato salsa:

3 ripe tomatoes
1 small onion
1/2 red chili pepper
1/2 green jalapeno popper
Handful of torn cilantro
Juice of 1 lime
A pinch of cumin
Salt, pepper

Start with the salsa. Finely chop tomatoes, onion, chili, pepper, jalapeno pepper and cilantro. Mix everything together with lemon juice, cumin, salt pepper. If it’s too mild for your taste buds add more chili and jalapeno pepper.  Refrigerate for at least 1 hour.

For the tacos drain beans and saute on a skillet together with corn. After few min season with cumin, salt  and pepper. Meanwhile heat your tacos on a separate skillet.

When ready spread a layer of beans and corn on a taco followed by some shredded cheese and salsa. Fold the edges and enjoy :P

    Wow! These look tremendously tasty. I am a truly crazy for tacos and this one has got me very hungry right now. Great photo, btw.
